Helpful home tips from Exit Independence Realty in Jacksonville NC

Move the grill.  Whether you have a gas or charcoal grill, you want to move it away from the house and or out of the garage.  One, you want to move any grill away from the house so you don’t melt or burn the siding.  Secondly, you want to remove any grill from the garage before use.  This is so you don’t have smoke damage or a buildup carbon monoxide.  Either can lead to a bad day for you.  Also, don’t use a charcoal grill in a high wind situation (at the beach) as hot embers can be blown into or onto houses – melting the siding or causing fires.  Yes, this has happened before.

April is Autism Awareness Month

April is Autism Awareness Month and we at Exit Independence Realty are LIGHTING IT UP BLUE!

Autism Awareness, I’m sure you have seen it in the news, or it affects you or your family personally.  I’m not going to give you the statistics, the latest theory on what causes it or what cures it.  What I am going to do is give you a little insight into what it’s like to be the parent of a child with autism.   First off, please don’t ever pity me.  I consider my son a blessing from God and he may not be perfect in your eyes, but he is in mine.

My son will be 21 this spring, and to an outsider there are a lot of things he can’t do, however I see all of the things that he CAN do.   He can do chores like taking out the trash, he can help feed our pets, he can help do his laundry, he understands most everything being said to him,  he has the most incredible giggle that can brighten up any bad mood, and a hug from him is priceless.

Most people with autism are hypersensitive and can hear, see, taste, smell and feel things that we tune out.   Have you ever been in a store and seen a person with autism having a “meltdown”?  Chances are the florescent lights are flickering and it's making them feel ill.  It could be the sound of the broken wheels on the cart as it thumps along or maybe the temperature change near the refrigerated section, all things that you and I may not notice.

When my son was in preschool his teacher had a class for us parents.  She had us sit on a block, rub one arm with a soft piece of fabric, while rubbing sandpaper with our other hand.  Then she turned on one radio to static, and one to music, all while she flipped the lights on and off quickly.   Then she said…”This is what your child faces every waking moment… over stimulation”.

So today what I would like you to take from this blog is your own awareness of autism.   These people are not contagious, they are not freaks and they are not going away.

If someone with this special need comes up to you, don’t be afraid, don’t pull away, and please don’t be mean, but smile, say hello, tell them that they are doing a great job, believe me when I say, you will feel great inside knowing that you were one of the few that took the time to cross that fine line into the life of a person with autism.

What are your Favorite Holiday Traditions?

  

Like most families, the folks at Exit Independence have favorite family traditions, whether it is a treasured family recipe or a special ornament that tops the tree.

Here are a few favorites from our office: 

 Ellen Hough’s favorite recipe is for 

Broccoli Cornbread

1 pkg. frozen chopped broccoli, thawed & drained

1 Cup chopped onion

16 oz. cottage cheese

1 Box Jiffy cornbread mix

4 Eggs, slightly beaten

1 stick butter, melted

Shredded cheddar cheese

Seasoning; use whatever you like-i.e. garlic powder, Mrs. Dash, etc. 

Mix all together except cheddar cheese.  Pour in 9 x 13 pan.  Top with cheddar cheese.  Bake at 350 for about 30 minutes or until light brown.

 Christina Asbury’s favorite recipe is:

Peanut Butter Bon Bons

1 1/2 Cups creamy peanut butter

3/4 Cup margarine or butter (softened)

1 TBSP Vanilla extract

1/2 TSP Salt

1 (14 OUNCE) Can sweetened condensed milk NOT evaporated milk

2 Lbs Confectioners’ sugar

1 (24 OUNCE) Chocolate or vanilla candy coating melted and held over hot water in large mixing bowl, beat peanut butter, margarine, vanilla and salt until fluffy: gradually beat the condensed milk then add the confectioners’ sugar slowly until smooth, shape into 1 inch balls, placing on baking sheet, chill until firm. With toothpick, or wooden picks, dip each into the candy coating, let excess candy coating drip off. Place on wax paper-lined baking sheet to harden. Let stand or shill until firm. Store at room temperature or refrigerate. Freezes well.

Tips: Always use dry utensils (moisture causes coating to harden)

Do Not Add Liquid (water, milk margarine or butter when melting or to soften)

If coating becomes too thick, add solid vegetable shortening, 1 tbsp at a time, while heating stir until smooth.

Each cube - 2oz 

Alexis Pierson’s favorite holiday tradition is opening one stocking stuffer present on Christmas Eve. 

Tim Abbey’s favorite recipe is: 

Five-Onion Soup Recipe

1 tablespoon olive oil
1 1/4 pounds Spanish onions (about 2 large), thinly sliced
1 large red onion, thinly sliced
1 small leek, halved, thinly sliced, and well rinsed
3 to 4 shallots, thinly sliced
1/2 cup minced garlic (about 20 cloves)
5 tablespoons dry sherry
1/4 cup Madeira wine
1 1/2 teaspoons beef base
1 1/2 teaspoons chicken base
1 teaspoon fresh thyme leaves
3/4 teaspoon herbs de Provence
1 small bay leaf
1 3/4 quarts (7 cups) reconstituted store-bought demi-glace, or beef broth
1 teaspoon salt
1/2 teaspoon freshly ground white pepper Croutons (See recipe below)
1 1/4 pounds Swiss or Jarlsberg cheese, grates or shredded Chopped fresh flat-leaf parsley, for serving

In a deep stockpot, heat the olive oil over medium-low heat. Add both types of onions, the leeks, shallots, and garlic and cook very slowly, loosely covered, for 30 to 35 minutes or until the onions release their juices, are very soft and syrupy, and are lightly browned.
Add the sherry, Madeira, beef and chicken base, thyme, herbs de Provence, and bay leaf. Raise the heat to medium and bring to a simmer. Simmer 4 to 5 minutes to cook off the alcohol.
Stir in the demi-glace and bring to a boil. Lower the heat and simmer, partially covered, for about 20 minutes.
Preheat the broiler.
Remove the bay leaf, adjust the seasoning with salt and pepper, and ladle the soup into 10 broiler-safe soup crocks. Lay 2 croutons on top of each bowl of soup and sprinkle the cheese over the croutons. The cheese should cover both the crouton and the soup.
Working in batches, broil the soup crocks 2 to 3 inches from the heat source for about 2 minutes, or until the cheese browns and the soup bubbles around the sides. Use heavy oven mitts to handle the crocks and take great care removing the crocks from the broiler. Garnish each bowl with parsley and serve soup immediately.

He also enjoys Mulled Wine.

Aileen Green’s favorite tradition is to buy everyone an ornament each year, and that person must hang all of their ornaments from the past years on the tree themselves.

Farmers Manage Deer Project

 

The Jacksonville Daily News reported that the Farmers Manage Deer project received funding from the NC Tobacco Trust Fund Commission this week.    The NC Wildlife Federation was awarded with a $150,000 check on 11/10/12 for the project that will allow hunters to hunt on farmland for two weeks during deer hunting season  2013 with the goal of helping to manage the deer overpopulation, therefore decreasing crop damage and increasing the supply of protein by the local food banks through the donated venison.

NC Hunters for the Hungry will process the venison at NCDA &CA certified facilities, grinding and freezing the meat into two pound packages and distributing it to local food banks.

Are You Ready for the Holidays?

Here it is, November, Halloween was last week and we changed the clocks back over the weekend.   That only means one thing… the holiday season is officially upon us!

Soon you will see all the street lights in town decorated with holiday banners.   And the stores will be gearing up for the Christmas sales.

If you are new to the area, Jacksonville has some great family friendly festivities to look forward to.

Santa will be at the Jacksonville Mall on November 16th.

November 17th  is the annual  Christmas Parade, starting  at the Coastal Carolina Community College.

November 23rd    is the Swansboro Flotilla

December 1st  is the  Winter Wonderfest  featuring ice sculptures, pictures with Santa, sledding with REAL SNOW, the tree lighting and the 25th Annual Flotilla!

December 1st, 2nd and 3rd  the Festival of Trees  will be at The American Legion Building.

Mike’s Farm  has all sorts of holiday activities as well as Christmas trees for sale; however you need to call ahead because their events fill up fast.

The Justice Christmas Tree Farm also has trees for sale for those that want a freshly cut tree or the experience of picking out and cutting down your own tree.

And Marines Toys for Tots  Foundation will be collecting new, unopened toys at several locations including Exit Independence Realty at 603 New Bridge Street, Jacksonville, NC 28540.
